Homemade Mexican Churros

Homemade Mexican churros are a delightful treat that will transport you straight to the bustling streets of Mexico. These crispy, golden-brown pastries are filled with a light and airy interior, and they're irresistibly addictive when dusted with cinnamon sugar. Perfect for a family gathering, party, or a simple afternoon indulgence, these churros are sure to impress with their authentic flavor and satisfying crunch.

Ingredients

For the Churros:

  • 1 cup water
  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Vegetable oil for frying
  • Cinnamon sugar (1/2 cup granulated sugar mixed with 1 tablespoon ground cinnamon)

For the Chocolate Dipping Sauce (Optional):

  • 1 cup semisweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  • Prepare the Churro Dough:
    • In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat, stirring occasionally.
    • Once the mixture boils, remove from heat and immediately whisk in the flour until a smooth dough forms.
    • Let the dough cool slightly, then beat in the eggs one at a time until incorporated.
  • Shape the Churros:
    • Transfer the dough to a piping bag fitted with a star-shaped tip.
    • Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
    • Pipe the churro dough into the hot oil, cutting the dough as you pipe to create 6-inch lengths. Fry in batches until golden brown and crispy, flipping occasionally.
    • Remove the churros from the oil using a slotted spoon and drain on paper towels.
  • Coat with Cinnamon Sugar:
    • While the churros are still warm, toss them in the cinnamon sugar mixture to coat evenly.
  • Prepare the Chocolate Dipping Sauce (Optional):
    • In a microwave-safe bowl, combine chocolate chips and heavy cream. Heat in 30-second intervals, stirring after each, until smooth and melted.
  • Serve:
    • Enjoy the churros warm, dipped in chocolate sauce if desired.

Tips

  • For extra crispy churros, allow the dough to chill in the refrigerator for at least 30 minutes before piping.
  • To prevent the churros from becoming greasy, be sure to drain them thoroughly on paper towels.
  • Experiment with different fillings for the churros, such as dulce de leche or custard.
  • For a fun twist, try adding a pinch of cardamom or nutmeg to the dough.
  • If you don't have a piping bag, you can use a ziplock bag with a small corner cut off.
