Shrimp and Broccoli Alfredo: A Creamy, Indulgent Classic

Shrimp and Broccoli Alfredo

Shrimp and Broccoli Alfredo is a timeless dish that effortlessly blends the delicate sweetness of shrimp with the vibrant crunch of broccoli, all enveloped in a rich, creamy Alfredo sauce. This classic Italian-American recipe is a crowd-pleaser that can be enjoyed on a weeknight or elevated for special occasions.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 head broccoli, cut into florets
  • 8 ounces fettuccine pasta
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Drain and reserve 1 cup of pasta water.
  2. Prepare the Shrimp and Broccoli: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside. In the same skillet, add the remaining butter and sauté the broccoli florets until tender-crisp, about 5 minutes.
  3. Create the Alfredo Sauce: In the same skillet, reduce heat to medium and melt the remaining butter. Add the minced garlic and cook for 30 seconds until fragrant. Gradually whisk in the flour, creating a roux. Cook for 1 minute, stirring constantly.
  4. Build the Sauce: Gradually whisk in the milk, allowing the mixture to thicken. Bring to a simmer and cook for 2-3 minutes, stirring continuously until the sauce is smooth and creamy.
  5. Combine and Serve: Remove the skillet from heat and stir in the Parmesan cheese, salt, and pepper. Add the cooked shrimp and broccoli, tossing to coat evenly in the Alfredo sauce. If the sauce is too thick, gradually add the reserved pasta water, one tablespoon at a time, until desired consistency is reached. Serve the Alfredo sauce generously over the cooked fettuccine. Garnish with additional Parmesan cheese and red pepper flakes, if desired.

Tips for Elevated Flavor

  • Fresh Ingredients: Opt for fresh, high-quality ingredients for the best flavor.
  • Pasta Water Magic: Saving some pasta water helps to emulsify the sauce and create a smoother texture.
  • Garlic and Pepper: Don't be shy with the garlic and black pepper for added depth of flavor.
  • Lemon Zest: A pinch of lemon zest can brighten the sauce and balance the richness.
  • Protein Boost: Add cooked chicken or pan-seared scallops for a more substantial meal.
  • Vegetable Variety: Experiment with different vegetables like asparagus, spinach, or mushrooms.
  • Pasta Alternatives: Try using zucchini noodles (zoodles) or whole-wheat pasta for a healthier twist.
  • Storage and Reheating: Store leftovers in an airtight container in the refrigerator. Reheat gently in a saucepan over low heat, adding a splash of milk to loosen the sauce.
