Caramel apple fritters are a sumptuous treat that perfectly marries the sweet and tangy flavors of apples with the rich indulgence of caramel. Ingredients

For the Fritters:

  • 1 3/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 4 tablespoons brown sugar, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon, divided
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 2 eggs
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon cornstarch
  • 1 1/2 Granny Smith apples, peeled and diced
  • 12 pieces caramel candy, chopped
  • 3 cups vegetable oil for frying

For the Glaze:

  • 2 cups confectioners sugar
  • 3 tablespoons whole milk
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cardamom

Instructions

Preparing the Fritters:

  1. In a large bowl, whisk together the flour, granulated sugar, 3 tablespoons of brown sugar, baking powder, salt, 1 teaspoon of cinnamon, allspice, cardamom, and nutmeg.
  2. In a separate bowl, beat the eggs lightly and then stir them into the dry ingredients along with the vanilla extract and melted butter.
  3. In a small bowl, combine the remaining 1 tablespoon of brown sugar and cinnamon with the cornstarch. Toss the diced apple pieces in this mixture to coat them evenly.
  4. Fold the apple mixture and chopped caramel pieces into the batter.
  5. Heat the vegetable oil in a deep pan to 270°F (132°C).
  6. Use two spoons to scoop out small portions of batter and carefully drop them into the hot oil, being cautious not to overcrowd the pan.
  7. Fry the fritters for about 3 minutes on each side, or until they turn golden brown and crispy.
  8. Remove the fritters from the oil using a slotted spoon and place them on a wire rack to drain excess oil.

Making the Glaze:

  1. In a medium bowl, whisk together the confectioners sugar, whole milk, salt, vanilla extract, and cardamom until you achieve a smooth and pourable glaze. Adjust the consistency by adding more sugar for a thicker glaze or a little more milk for a thinner glaze.

Assembling the Fritters:

  1. Once the fritters have cooled slightly, dip each one into the glaze, allowing the excess to drip off.
  2. Place the glazed fritters on a wire rack to set for at least 45 minutes before serving.

Tips

  • For extra flavor, use a mix of Granny Smith and Honeycrisp apples.
  • If you don't have caramel candy, you can substitute it with a caramel sauce.
  • To prevent the fritters from becoming greasy, allow them to cool completely on a wire rack before glazing.
  • Store leftover fritters in an airtight container at room temperature for up to two days.
  • Serve the fritters warm with a scoop of vanilla ice cream for a delightful dessert experience.
