Ingredients
For the Fritters:
- 1 3/4 cups all-purpose flour
- 1/3 cup granulated sugar
- 4 tablespoons brown sugar, divided

- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cardamom

- 12 pieces caramel candy, chopped

For the Glaze:
- 2 cups confectioners sugar
- 3 tablespoons whole milk
- pinch of salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cardamom
Instructions
Preparing the Fritters:
- In a large bowl, whisk together the flour, granulated sugar, 3 tablespoons of brown sugar, baking powder, salt, 1 teaspoon of cinnamon, allspice, cardamom, and nutmeg.
- In a separate bowl, beat the eggs lightly and then stir them into the dry ingredients along with the vanilla extract and melted butter.
- In a small bowl, combine the remaining 1 tablespoon of brown sugar and cinnamon with the cornstarch. Toss the diced apple pieces in this mixture to coat them evenly.
- Fold the apple mixture and chopped caramel pieces into the batter.
- Heat the vegetable oil in a deep pan to 270°F (132°C).
- Use two spoons to scoop out small portions of batter and carefully drop them into the hot oil, being cautious not to overcrowd the pan.
