  • 1 box instant chocolate pudding mix (3.9 oz)
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup vegetable oil
  • 1 cup sour cream or buttermilk
  • 3/4 cup brewed coffee, cooled
  • 2 cups Nestles Toll House chocolate chips

For the Ganache:

  • 2 tablespoons unsweetened cocoa powder
  • 1/2 box powdered sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • 1/2 cup chopped pecans

Instructions

Preparing the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt cake pan.
  2. In a large bowl, whisk together the cake mix and pudding mix.
  3. In a separate bowl, combine eggs, vanilla, oil, sour cream or buttermilk, and coffee.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared bundt pan.
  7. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting onto a serving plate.

Making the Ganache:

  1. In a small saucepan, melt the butter over low heat.
  2. Remove from heat and whisk in the cocoa powder, powdered sugar, vanilla, and milk until smooth.
  3. Stir in the chopped pecans.

Assembling the Cake:

  1. Pour the warm ganache over the cooled cake.
  2. Serve immediately, or let the ganache set slightly before serving.

Tips for Success

  • For a deeper chocolate flavor, use strong-brewed coffee.
  • If you prefer a sweeter ganache, increase the amount of powdered sugar.
  • For a nut-free option, omit the pecans.
  • To make the cake extra moist, add an extra tablespoon of coffee to the wet ingredients.
  • For a richer flavor, use dark chocolate chips.
  • Serve the cake warm with a scoop of vanilla ice cream for the ultimate indulgence.
