Polish Hamburgers, or Klupskies, are a hearty and comforting dish that offers a unique take on the classic American burger. Ingredients

For the patties:

  • 1 lb ground pork
  • 1 lb ground beef
  • 1 sleeve saltine crackers, crushed
  • 2/3 cup milk
  • 2 eggs, beaten
  • 1 small yellow onion, minced
  • 1 green bell pepper, minced
  • 1 tablespoon dried dill
  • 1/2 tablespoon garlic powder
  • 1 tablespoon dried parsley
  • 1/2 teaspoon nutmeg
  • 2 tablespoons butter

For the mushroom sauce:

  • 1/4 cup (1/2 stick) butter
  • 2 cups mushrooms, sliced
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups beef stock
  • 2 tablespoons sour cream
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  • Prepare the patties:
    • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
    • In a large bowl, combine ground pork, ground beef, crushed saltines, milk, eggs, onion, bell pepper, dill, garlic powder, parsley, and nutmeg. Season generously with salt and pepper, and mix until well combined.
    • Form the mixture into six patties, about 2 inches thick each. Place patties on the prepared baking sheet.
    • Refrigerate patties for 30 minutes to firm up.
  • Cook the patties:
    • Heat 2 tablespoons butter in a large skillet over medium-high heat.
    • Add patties to the skillet and cook for 5-7 minutes per side, or until browned.
    • Remove patties from the skillet and set aside on a plate lined with paper towels.
  • Prepare the mushroom sauce:
    • Melt remaining butter in the same skillet over medium heat. Add sliced mushrooms, Worcestershire sauce, and minced garlic. Cook until mushrooms are softened and fragrant, about 5 minutes.
    • Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly. Gradually whisk in beef stock until smooth. Bring to a simmer and cook until thickened, about 10 minutes.
    • Stir in sour cream and season with salt and pepper to taste.
  • Combine and serve:
    • Return the patties to the mushroom sauce and simmer for an additional 10-15 minutes, or until cooked through.
    • Serve hot, accompanied by your favorite side dishes, such as mashed potatoes or steamed vegetables.
