Golden Fried Catfish

Golden Fried Catfish is a crispy, flavorful dish that is perfect for a hearty meal or as a delicious appetizer. The catfish fillets are marinated in a blend of spicy mustard and thyme, then coated in a seasoned flour mixture before being deep-fried to a crispy golden perfection. This Southern favorite is packed with flavor and a satisfying crunch.

Ingredients:

  • 2 pounds catfish fillets, cut into 1 1/2-inch pieces
  • 2 tablespoons dried thyme leaves
  • 1 cup spicy brown mustard
  • 1-quart vegetable oil for frying
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon baking soda

Instructions:

  1. Marinate the Catfish: Place the catfish pieces in a mixing bowl and sprinkle with the dried thyme leaves. Toss the fish to ensure it is evenly coated. Add the spicy brown mustard and mix thoroughly using your hands. Once everything is well-coated, cover the bowl and refrigerate the marinated catfish for at least 4 hours, or overnight for optimal flavor.
  2. Prepare for Frying: Heat the vegetable oil in a deep-fryer or a large saucepan over medium-high heat until it reaches 350°F (175°C). Meanwhile, in a separate mixing bowl, combine the flour, salt, black pepper, and baking soda. Whisk the ingredients together until evenly mixed.
  3. Coat and Fry the Catfish: One by one, dip each marinated piece of catfish into the flour mixture, ensuring it is fully coated. Shake off any excess flour. Carefully lower the catfish pieces into the hot oil in batches, frying until they are golden brown and no longer translucent in the center, about 3 to 4 minutes per batch. Be sure to let the oil return to the proper temperature between batches to ensure crispiness.
  4. Drain and Serve: Once fried, remove the catfish from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot and enjoy the crispy, golden-fried catfish.

Tips:

  • Ensure the oil reaches the correct temperature (350°F) before frying to prevent soggy fish.
  • For an extra crispy coating, dip the catfish pieces in the flour mixture a second time before frying.
  • Keep the fried catfish warm in a low oven if serving in large batches.
  • Pair with tartar sauce or your favorite dipping sauce for added flavor.

Enjoy your perfectly crispy, golden fried catfish with your favorite sides!
