Ingredients:
For the Meatloaf:
- ¾ cup seasoned breadcrumbs
- 1 ½ pounds lean ground beef
- 1 onion, diced (yellow onion works best)
- 3 tsp garlic, freshly minced
- 1 large egg
- ¼ cup BBQ sauce
- ¼ cup tomato sauce
- ½ cup frozen peas
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup fresh parsley, chopped
For the Mashed Potatoes:
- 1 ½ pounds red potatoes, peeled and quartered
- ¼ cup heavy whipping cream
- 4 tbsp butter
- 1 cup cheddar cheese, shredded
Instructions:
- Preheat your oven to 400°F (200°C).
- In a skillet, heat oil over medium heat and sauté the diced onion until soft and translucent. Add minced garlic and cook for another 30 seconds before removing from the heat. Set aside to cool.
- While the onions cool, boil the quartered potatoes in salted water until fork-tender. Drain and set aside.
- In a large mixing bowl, combine the ground beef, egg, breadcrumbs, BBQ sauce, tomato sauce, salt, pepper, and parsley. Mix together thoroughly with your hands until well combined.
- Gently fold in the frozen peas, ensuring they are evenly distributed in the meat mixture.
- Form the meat mixture into a loaf shape and place it in a greased baking pan.
- Bake in the preheated oven for 30 minutes.
- Meanwhile, prepare the mashed potatoes by mashing the cooked potatoes with butter and heavy whipping cream until smooth and creamy.
- After 30 minutes of baking, remove the meatloaf from the oven. Spread the prepared mashed potatoes over the top of the meatloaf.
- Sprinkle the shredded cheddar cheese evenly on top of the mashed potatoes.
- Return the meatloaf to the oven and bake for an additional 5 minutes or until the cheese has melted and is bubbly.
