1. Prepare the cassava

Cut cassava into pieces, peel, and wash thoroughly.

Grate finely, then squeeze to extract the juice.

Let the juice rest for 30 minutes so the starch settles. Discard the liquid and save the starch, adding it back to the grated cassava.
2. Start cooking

In a large pan, combine coconut milk, condensed milk, and food coloring (if using).

Stir well and bring to a boil over medium heat for about 15 minutes.
3. Add the cassava

Mix in the grated cassava along with the saved starch.

Reduce heat to low and keep stirring continuously for about 45 minutes until it thickens.
