1️⃣ Prepare the Oven
Preheat your oven to 375°F (190°C). Grease a baking dish or line with parchment paper for easy removal.
2️⃣ Mix the Dry Ingredients
In a large mixing bowl, whisk together the cornmeal, flour, baking powder, and salt until well combined.
3️⃣ Prepare the Wet Mixture
In another bowl, combine the mashed sweet potatoes, eggs, melted butter, honey, and buttermilk. Stir until smooth and creamy.
4️⃣ Combine Wet and Dry
Pour the wet mixture into the dry ingredients. Stir gently until everything is incorporated — avoid overmixing to keep the cornbread light and fluffy.

While the cornbread bakes, beat together the softened butter and honey until light, fluffy, and well combined.
