Mango Ube Biko Float
2-3 pcs. sweet mangoes, sliced
Ube Cream procedure:
1) Combine all purpose cream, condensed milk, violet food color and ube flavor. Mix well
2) Cover and chill until thickened
Biko procedure:
1) Combine water and glutinous rice
2) Cover and cook until done
3) In a pan combine coconut milk and sugar
4) Mix and bring to a boil
5) Turn the heat to low and add cooked rice
6) Mix well until it absorbs the liquid and it’s sticky
7) Flatten 1/2 cup of biko into a container
8 Layer slices of mango on top
9) Add another layer of biko (1/2cup)
10)Spread some ube cream on top
11) Serve or cover and chill until ready to serve
