Oil-Based Vanilla Cupcakes

Ingredients:

  • 1½ cups (190g) all-purpose flour

  • 1 cup (200g) granulated sugar

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 large eggs, at room temperature

  • ½ cup (120ml) vegetable oil (or any neutral oil)

  • ½ cup (120ml) buttermilk (or milk + 1 tsp vinegar/lemon juice)

  • ¼ cup (60ml) water

  • 2 tsp vanilla extract
