1. Preheat & Prepare

  • Preheat your oven to 180 °C (350 °F).

  • Line a 12-cup muffin tin with paper liners or lightly grease it.

2. Mix Wet Ingredients

  • In a large bowl, combine cottage cheese, eggs, pumpkin puree, honey (or sweetener), and vanilla extract. Mix until smooth.

3. Add Dry Ingredients

  • Gently fold in oat flour, protein powder, baking powder, pumpkin pie spice, and a pinch of salt.

  • Stir until just combined—avoid overmixing to keep muffins light and fluffy.

4. Bake

  • Divide the batter evenly among the muffin cups.

  • Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.

  • Let cool for a few minutes in the tin, then transfer to a wire rack.
