1. Preheat & Prepare

Preheat your oven to 180 °C (350 °F).

Line a 12-cup muffin tin with paper liners or lightly grease it.
2. Mix Wet Ingredients

In a large bowl, combine cottage cheese, eggs, pumpkin puree, honey (or sweetener), and vanilla extract. Mix until smooth.
3. Add Dry Ingredients

Gently fold in oat flour, protein powder, baking powder, pumpkin pie spice, and a pinch of salt.

Stir until just combined—avoid overmixing to keep muffins light and fluffy.
4. Bake

Divide the batter evenly among the muffin cups.

Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
