SPECIAL PUTO CHEESE

1. Prepare batter:
In a large bowl, sift together flour, sugar, baking powder, milk powder, and salt.
In another bowl, whisk eggs, water and oil (or melted butter) until well combined.
Gradually pour wet mixture into the dry ingredients. Mix gently until smooth (do not overmix).
2. Rest the batter:
Cover the bowl with a clean cloth or cling wrap and let it rest for 1 hour. This helps make the puto softer and fluffier.
3. Prepare steamer:
Fill your steamer with water and bring to a boil over medium heat. Grease puto molds lightly with oil or line with muffin liners.
4. Fill molds:
Pour batter into the molds, about ¾ full.
Place cheese strips or salted egg slices on top (you can also combine both like in the picture).
5. Steam the puto:
Steam over low–medium fire for about 10 minutes, or until a toothpick inserted comes out clean.
Avoid opening the lid often to prevent collapsing.
